To Øl's founders, Tore Gynther and Tobias Emil Jensen, attended the Det Frie Gymnasium high school in Copenhagen. This unique school champions democracy and freedom, so much so that students learn what interest them: graffiti covers classroom walls and students have equal vote on school matters.
When teachers and students voted to buy brewing equipment for the school kitchen, Gynther and Jensen began brewing under the tutelage of Mikkel Borg Bjergsø (Mikkeller founder), who happened to be a teacher at the school. After graduating high school, Gynther and Jensen launched To Øl in 2010.
To Øl stays true to its free-spirited roots in brewing experimental beers. To Øl operates as a 'gypsy' brewery, which means they brew their beers at other breweries. This allows them to continue to learn new brewing techniques, while offering the freedom to brew new and interesting beers.
